I had a couple of my girlfriends over for scary movie night last night.\u00a0 To get in the Halloween and fall spirit, I decided to make pumpkin chocolate-chip cookies for dessert.\u00a0 These are so unbelievably easy, there is no excuse\u00a0 not to try these!<\/p>\n

So Easy Pumpkin Chocolate-Chip Cookies<\/strong><\/p>\n

Ingredients<\/span><\/p>\n

1 box cake mix – I used spice cake flavored mix<\/p>\n

1 can 100% pure pumpkin, not pumpkin pie filling<\/p>\n

1 cup semi-sweet chocolate chips<\/p>\n

Directions<\/span><\/p>\n

Preheat oven to 350 degrees.\u00a0 Prepare cookie or baking sheet with parchment paper or foil sprayed with cooking spray.<\/p>\n

Empty canned pumpkin into large bowl.\u00a0 Add cake mix, and mix thoroughly.\u00a0 Add chocolate chips and stir to combine.<\/p>\n

Using a tablespoon or ice cream scoop, plop batter in tablespoon-sized amounts onto cookie sheet.\u00a0 I got 12 on my sheet.<\/p>\n

Bake for 10-12 minutes.\u00a0 These cookies will remain soft even after cooking.<\/p>\n

Repeat batches until batter is used up.<\/p>\n

NOTES:<\/p>\n

You can make cupcakes or mini-cupcakes instead of cookies if you want.\u00a0 Adjust cooking time to what it says on the box of cake\u00a0 mix.<\/p>\n

I used spice cake mix, but you could use whatever flavor mix you want.\u00a0 I like using spice mix because all the pumpkin-pie spices are already in it.\u00a0 I’ve also used chocolate cake mix to make chocolate chocolate-chip cookies.<\/p>\n
