\n Sticky, spicy-sweet gingerbread strewn with pieces of chopped pears.\u00a0 This delicious, low-fat dessert combines several of my favorite fall flavors.<\/p>\n I love the juicy perfection of a just-ripe-enough pear — the sweet pear smell, the not too mushiness, the juice that dribbles out with every bite.\u00a0 Now that fall is here, I see pears a lot more and that’s fine with me!\u00a0 Fall also makes me want to bake, even though I don’t do a lot of it.\u00a0 As I’ve been eating my pears this week, I decided I wanted to find a nice and easy dessert recipe that incorporated them.\u00a0 At first I was looking for pear cake recipes, but then I found a recipe for gingerbread with pears in the\u00a0 Moosewood Restaurant Book of Desserts<\/a> that practically screamed “MAKE ME!!” because of its simplicity and combination of flavors.<\/p>\n So I made it.\u00a0 And I’m so glad I did!\u00a0 The only other time I’ve made gingerbread is from the Pillsbury boxed mix, but I was surprised to find how easy it is to make it from scratch.<\/p>\n Gingerbread with Pears<\/strong>, from the Moosewood Restaurant Book of Desserts<\/em><\/p>\n Ingredients<\/span> <\/em><\/p>\n 2 cups unbleached white flour<\/p>\n 1 cup sugar<\/p>\n 2 tsp. ground ginger<\/p>\n 1 tsp. ground cinnamon<\/p>\n 1\/2 tsp. salt<\/p>\n 1.5 tsp. baking soda<\/p>\n ** 1\/2 tsp. pumpkin pie spice\u00a0 – my addition to the recipe<\/p>\n 1\/2 cup unsulphured molasses<\/p>\n 2 egg whites, lightly beaten<\/p>\n 1\/2 cup buttermilk<\/p>\n 2 tbsp. lemon juice<\/p>\n 2 fresh pears, chopped into pieces<\/p>\n \n Preparation<\/span><\/p>\n 1.\u00a0 Preheat oven to 350 degrees Fahrenheit.\u00a0 Spray a 9-inch square baking pan with cooking spray.<\/p>\n 2.\u00a0 In a large mixing bowl, combine all the dry ingredients.<\/p>\n 3.\u00a0 Combine the wet ingredients through lemon juice in a separate bowl.<\/p>\n 4.\u00a0 Add the wet ingredients to the dry ingredients, stirring until just combined.\u00a0 Now add the pear pieces.<\/p>\n 5.\u00a0\u00a0 Pour mixture into baking pan and bake for approximately 35-45 minutes.<\/p>\n<\/a><\/p>\n
