I don’t know if it was the rain or the fact that it was Monday, but I was just hungry all day.
After fighting it longer than I should have, I had a pear and some hummus on an english muffin for an afternoon snack.

Because of the crap weather, comfort food sounded good for dinner. I decided to make some potato-flake fried chicken and was too lazy to make anything else to go with it, so I had mine over some lettuce. I seasoned the potato flakes with Old Bay seasoning and Jane’s Krazy Mixed-Up Salt, along with some chili powder and black pepper.
Next time I need to pay better attention to my chicken when I buy it. I thought I was buying boneless skinless thighs, but instead I bought bone-in skinless thighs. No wonder it seemed too cheap to be true! Oh well, what’s an extra 30 minutes of cooking time when you’re already hungry?
And I don’t want to hear any food-snob comments about using instant potato flakes to bread chicken. It’s actually pretty good! But it only works if you use chicken thighs — you need the extra fat in the thighs.
So, what do you think about having separate posts for each meal? I think it’s a little easier to write about each meal and not have it all run together. But having to think of a title for each post? I guess it’ll be a fun challenge!

I would have never thought to coat the chicken in potato flakes!! I love that! I’m all about crazy coatings to spice things up. I’ve used bisquick, cereals, nuts, and crackers.
I’m eating Spaghetti-O’s from the can right now. I’m in no position to judge, my friend! 😉
@Christina – When I first read about using them, I was skeptical. But it really is good!
@Sophia – I haven’t had those in forever! Every once in a while I have to get my Spaghetti-O’s/Chef Boyardee fix. 🙂
